“Il mulino Garau” is the symbol of evolution in the use of energy sources in the grain transformation process. The water powered engines fed by water from the stream, used to work the water run mills, which later passed on to electric energy from 1923.
The mill operated from around 1918 thanks to the Garau brothers, it proceeded with machinery innovations up to 1983; producing flour, semolina and bran.
The present day structure dates back to 1973 and applies a 12 step processing system to guarantee the processing of a larger quantity of grain.
The re-utilization of the structure and the machinery, kept within the building, have the aim of combining educational aspect with gastronomic aspect, illustrating the phases of the transformation process that from grain gives us flour and from this bread, pasta, desserts...
